Spanish title:	Fortalecimiento de la cadena productiva del Sacha Inchi en la comunidad Ancestral Kite Kiwe: an�lisis de la siembra y la transformaci�n en productos derivados.
English abstract:	Sacha Inchi (Plukenetia volubilis) is an oilseed plant with great agro-industrial potential, which has been widely used as food by communities in the Latin American Amazon. Its cultivation has expanded in recent years due to its nutritional value and potential in the food and cosmetics market, due to its high concentration of proteins, vitamins, antioxidants and omegas 3, 6 and 9. The Kite Kiwe ancestral community located in the municipality of Timb�o in the department of Cauca (Colombia), currently processes this seed in an artisan way under their cultural traditions. Thus, the objective of this work was focused on determining the parameters for the standardization of Sacha Inchi planting and harvesting in this region and establishing the transformation route of the raw material into oil, as well as identifying the possible uses of the derived products. A bibliographical review was carried out on the methods of harvesting and harvesting Sacha Inchi, the specific parameters were defined in each stage, analyzing the methods used by different farmers, articulating it to the process carried out in the community, the steps for oil extraction were found. of the seed according to different methods and possible derived products will be used.
Spanish abstract:	El Sacha Inchi (Plukenetia volubilis) es una planta oleaginosa, con gran potencial agroindustrial, que ha sido ampliamente utilizada en la alimentaci�n por las comunidades de la Amazonia latinoamericana, su cultivo se ha expandido en los �ltimos a�os debido a su valor nutricional y a su potencial comercial en el mercado de alimentos y cosm�ticos, por su alta concentraci�n de prote�nas, vitaminas, antioxidantes y omegas 3, 6 y 9. La comunidad ancestral Kite Kiwe ubicada en el municipio de Timb�o en el departamento del Cauca (Colombia), actualmente procesa esta semilla de manera artesanal bajo sus tradiciones culturales. As�, el objetivo de este trabajo se enfoc� en determinar los par�metros para la estandarizaci�n del proceso de siembra y cosecha de Sacha Inchi en esta regi�n y establecer la ruta de trasformaci�n de la materia prima en aceite, adem�s en identificar los posibles usos de los productos derivados. Se realiz� una revisi�n bibliogr�fica sobre los m�todos de siembra y cosecha de Sacha Inchi, se establecen los par�metros espec�ficos en cada etapa, analizando los m�todos utilizados por diferentes agricultores articul�ndolo al proceso llevado a cabo en la comunidad, se establecieron los pasos para la extracci�n de aceite de la semilla seg�n diferentes m�todos y se reconocen posibles productos derivados.
